Marinated Mushroom and Zucchini Nori Wraps!

Spring has arrived and it is time to ease up the dehydrated meals and go full speed ahead with as much live food as possible.  Here is a tasty idea to get you started. This recipe was inspired by my dear friend, Michelle Jarvis.

Serves 2

•    5 mushrooms – sliced
•    ½ zucchini – chopped
•    ¼ cup shredded cabbage (I used red but can be any kind) – shredded
•    ½ cup broccoli spouts – or any spouts you have on hand
•    ½ -1 avocado – depending on size and how much you want smothered in your wrap!
•    1/3 cup nama shoyu
•    2 nori sheets

Directions: Marinate mushrooms and zucchini in nama shoyu for 30 minutes, then drain excess marinade.  Spread avocado on bottom of nori roll.  Place desired amount of mushrooms and zucchini on top of avocado.  Add cabbage. Top with spouts.  Roll up and eat right away.   You will probably want at least one more!

Note: You can use lettuce if you do not have cabbage on hand.  Add anything else that sounds good to you.  Play around with this easy recipe and have fun making it your own special creation.  For example, if you do not have nori sheets, use a napa cabbage or swiss chard leaf instead.
